I have the best guacamole recipe and I’ve been making it for a long time the same way. When ever I serve this homemade guacamole as a party appetizer, it’s devoured and I get lots of compliments. It is really simple and easy to make, too!

If you have been following this blog for any time, then you know I have an obsession for avocados and guacamole. I eat one or the other (or both!) just about every day…. If you are trying to lose weight – limit yourself to 1/2 an avocado a day.  Even though it has good fats, you don’t want to over do it because it is such high density of calories.  This is actually really hard for me to do sometimes….

Why avocados are good for you

Avocados are a superfood – they are nutrient dense & heart heathy!  A third of a medium avocado contains about 20 vitamins & minerals and is only about 80 calories.  The only fat that avocados contain are GOOD fats – heart-healthy monounsaturated fat.  They are also naturally free from sugar, sodium and cholesterol.  They are also an EXCELLENT source of dietary fiber.  1 Avocado has whopping 13 grams of fiber!  Avocados are also unique because it helps increase the absorption of the fat-soluble vitamins A, D, E, & K.  Because of its creamy texture this makes avocados a great first fresh food for babies to enjoy.

How to pick good avocados for the best guacamole recipe

Good, ripe avocados are more black on the skin instead of green.  The test is gently squeezing them.  If it is hard, then it is not ripe.  If it is too soft and mushy, then it is over-ripe – don’t buy!  You want it to be soft, but still a LITTLE firm.

I sometimes buy a combination of ripe avocados and green, non-ripe avocados.  It depends on how quickly I plan on using them.  If you buy the harder, green avocados, just put them out on your counter to ripen.  It make take a couple days.  To ripen them faster, place them next to some bananas!

Where to buy avocados

You can get avocados just about at any grocery store.  The cheapest prices I have found are at Aldi or Walmart or HEB.  Sometimes I’ll buy the bag of pre-package avocados or sometimes I’ll pick them out individually.  It really just depends on price and how fresh they look.

Haas avocados are usually bigger than regular avocados, but can also be more expensive. Many times I’ll buy the smaller avocados and I think they taste just as good as the Haas avocados.

How to cut an avocado

To slice an avocado, take a sharp parring knife and cut around the avocado lengthwise, slicing until the blade hits the pit.  Once you have made a full circle you should be able to twist apart and have 2 halves – 1 with the seed and 1 without.  If only using 1/2 an avocado, leave the seed in the 1 half and wrap for later.

When removing the seed, carefully whack into the seed with the sharp blade of your knife and twist to lift out. 

How to store avocados to last longer

When I buy avocados, I put them in my refrigerator in a produce crisper.  It makes them last longer until you are ready to use them. Again, to ripen faster place them with your bananas on your counter and then when they get black & softer on the outside, you can then put them in your refrigerator crisper to last at least a week or sometimes longer!

In the mornings I normally only use 1/2 an avocado.  I save the other 1/2 by leaving the seed in it (I use the non-seed side first) and wrapping tightly with Press N Seal wrap.  I use the Press N Seal and press onto the inside of the avocado to seal from the air.  Then I put the 1/2 avocado back in the fridge to save until tomorrow. It usually lasts 1-2 days wrapped like that. Even if it goes a few days longer, you can scrape off the avocado that starts getting dark and still use the inside that is still green.

How to slice or dice avocados to make easy guacamole

I like to slice or dice my avocado right in the skin of 1/2 an avocado.  Use the tip of your knife to draw lines length wise pushing all the way until you touch the skin.  If you want to have the avocado diced, then just slice the lines the other direction.  Once you have sliced or diced, use a large spoon the scoop out the avocado from the skin.

When I am making my best guacamole recipe, I use this grid method and then spoon out the avocado into a bowl. This makes mashing the avocado much easier if it is already diced into smaller chunks.

Like I said I eat 1/2 an avocado for breakfast almost everyday – I make this Everything Bagel Avocado Toast and top it with arugula to get in some cruciferous greens for breakfast.  This fills me up and I sometimes forget to eat lunch until late because I’m still not hungry!

Store the best homemade guacamole so it lasts longer

If you make this best guacamole recipe for a party, you probably won’t have any left over, BUT if you are making it for your family and would like to have some left for a couple days without it getting gross then I do have some tips for you. I have tried several different methods I found on the internet, but only 1 thing has really truly worked for me.

It involved using a plastic wrap like Press N Seal – I really like this brand because it is more sturdy and easier to handle. It’s not going to get all stuck to itself and impossible to pull apart or rip holes. I put the guacamole in a storage container like Rubbermaid Premier (that’s what I use and love). Then I take the Press N Seal and press it against the guacamole and up the sides of the container to completely seal out the air. I then put the airtight lid OVER the Press N Seal layer. This technique has helped my guacamole last for DAYS!

You can also save the seeds and put them in the guacamole after you make it. Many people swear by this method to help it stay fresh and even serve the guacamole in a large bowl with the seeds in it. I sometimes do this, but if I’m trying to keep it for a few days in the fridge I still use my Press N Seal method.

This Best Guacamole Recipe has been a fan favorite and my secret is the garlic powder!  It really adds a nice flavor!  This is super easy to make.

Ingredients

  • 6-8 avocados, sliced & pitted (save the pits for later)
  • 1 can drained Rotel, (diced tomatoes & chilis) no salt added (I like mild)
  • Juice of 1 lemon or 2 limes – use a hand squeezer like this one
  • 1 tablespoon dried cilantro or 1/4 cup of fresh chopped cilantro
  • 1-2 teaspoons garlic powder
  • dash of salt & pepper to taste

Mash the avocado in a large bowl with the back of a fork. Then add the rest of the ingredients & mix well. Add more seasoning to taste.

Ingredients

  • 6-8 ripe avocados
  • 1 can Rotel (diced tomatoes & chilis), drained no salt added (I like mild)
  • 1 lemon juiced, or 2 limes
  • 1/4 cup chopped fresh cilantro (or 1 tablespoon dried cilantro)
  • 1-2 teaspoons garlic powder
  • dash of salt & pepper to taste

Instructions

  • Slice open avocados, remove seeds (set aside for later) and then scoop out avocado into a medium bowl. Mash avocado with back of a fork until smooth, but slightly chunky if desired.
  • Add the rest of ingredients & mix until well combined. Taste and add more garlic, salt, pepper, or cilantro if necessary.
    Add seeds back to guacamole and serve immediately.

Notes
