  • Place the chocolate and non-dairy milk in a microwave-safe bowl and heat for 1 minute. Let stand for 30 seconds, then stir thoroughly, until completely smooth. If all the pieces of chocolate haven’t fully melted, reheat at intervals of 30 seconds, stirring vigorously each time. 
  • Add the maple syrup, vanilla, and salt, if using. Stir well to incorporate. Place the bowl in the fridge and chill for at least 2 hours, until set and solid enough to scoop.
  • Once firm, use a small cookie scoop to portion the mixture into 20 – 24 walnut-sized balls. Set out bowl(s) full of your desired coatings; about 1 cup total to cover all the truffles.
  • Roll the balls into smooth rounds between your hands, working quicky so that they don’t get to warm and sticky. You may need to pause and re-chill the balls if they become too soft to work with. About 15 minutes in the freezer should do the trick.
  • Place the balls in the bowl(s) of your chosen coating(s) and toss gently to cover. Press the toppings in gently and place on a serving platter or airtight container. You may need to do a second coating depending on how much sticks.
  • Enjoy at room temperature for the best flavor! Otherwise, store in an airtight container in the fridge for up to 1 week; let stand at room temperature for about 1 hour before serving.
