Whole Food Plant-Based Banana Bread Mug Cake

This Banana Bread Mug Cake is also whole food plant based or WFPB and even oil-free. There’s really no need to add oil because the banana keeps it plenty moist.

This recipe is also refined sugar free. I like to use date sugar because it’s only ground up dates, so you get all the nutrients & fiber from the dates. It’s also much lower on the glycemic index.

I also use whole wheat flour instead of refined white flour for more fiber & nutrients. This Vegan Banana Bread Mug Cake has 5 grams of fiber and 5 grams of protein making it a filling treat that’s not overly sweet.

Can You Make This Vegan Banana Bread Gluten-Free?

Full, disclosure I’m not a gluten-free expert baker. So I only give common substitutions, like using oat flour instead of whole wheat flour. But many find that oat flour is more gummy (because of the extra soluble fiber) so you may have to cook it longer.

If you don’t have celiac disease or aren’t gluten sensitive, then I recommend sticking with the whole wheat flour for the best texture. Gluten gets a bad rap because of a lot of marketing and misinformation. Only about 1% of the population are celiac and around 6% gluten-sensitive, so really 93% of the population can tolerate gluten-containing foods just fine.

Coconut sugar is another unrefined sugar that you can use instead of date sugar. If you want to sub maple syrup or date syrup, just know it will be more wet and probably take longer to cook. (FYI – I haven’t tested this, but just my guess)

How Ripe Should Your Banana Be?

I recommend you use a VERY ripe banana. One that has brown spots on the outside. The very ripe banana will make this plenty sweet without having to add too much date sugar or coconut sugar, and it will make it more moist and easier to mix together.

This recipe takes 1/3 cup banana, about 1 medium banana, but be sure to measure it.

Walnuts & Vegan Dark Chocolate Chips Are Great Mix-Ins

While this Vegan Banana Bread Mug Cake is good just as it is, adding in some chopped walnuts & vegan dark chocolate chips take it over the top!

There are many vegan brands of chocolate chips on the market these days.  Look for the darkest chocolate (around 70% or higher) and the least amount of added sugar.  Enjoy Life Dark Chocolate Morsels are good and can be found at most grocery stores and also on Amazon. Instructions

  • In a large mug, add the mashed banana, milk, applesauce, & vanilla. Whisk really well for about 30 seconds.
  • Add in the flour, date sugar, baking powder, salt, & cinnamon. Mix until well combined making sure to scrape the bottom of the mug. Fold in any add-ins.
  • Microwave for 90-120 seconds. Center should not be overly wet, but also not too dry; it will firm up more as it cools.
  • Let it cool for at least 3 minutes and then enjoy!
