Golden like the summer sun, plantain chips have a unique snap and depth of flavor that plain potatoes can only envy. Earthy and subtly sweet, they need only a touch of lime and warm spices to coax out their natural richness. Each crisp is a perfect balance of savory and sweet, with just enough caramelization to hint at their tropical roots.

  • Use a sharp knife to cut off the ends of the plantain, then score the skin lengthwise, without going through to the flesh. Carefully remove the peel, leaving the inner plantain in one piece.
  • Cut plantains into diagonal slices about 1/8-inch thick. Use a mandoline for the greatest precision, or a very sharp knife to practice your knife skills. Place the slices in a large bowl.
  • Sprinkle lime juice, chili powder, cumin, and a pinch of salt into the bowl. Toss very gently to coat.
  • Line two air fryer sheets with foil. If using a basket, you’ll likely need to do this in several batches.
  • Arrange the sliced and seasoned plantains in a single layer, without any overlapping.
  • Air fry at 370℉ degrees for 5 – 6 minutes. Flip and cook for an additional 5 – 6 minutes or until evenly browned.
  • They may still be slightly soft when hot out of the air fryer. Let cool completely before enjoying

Notes

Serving suggestion: Plantain chips pair best with fresh, tropical flavors! Think pico de gallo, guacamole, any sort of salsa, or plant-based ceviche. They can also add a satisfying crunch when lightly crushed and sprinkled over salads and grain bowls. 
Notes: Leftovers can be stored in an airtight container at room temperature for up to 3 days. If they get soft, toss them back into the air fryer on the “toast” function for 1 – 2 minutes.
