
I believe that everyone deserves to know they have the power to change the trajectory of their health.
My dad didn’t have that choice.
Simply Plant Based Kitchen didn’t begin because I wanted to start a food blog or teach people how to make healthier recipes. It began with my dad, who struggled with Alzheimer’s disease for 10 years before he passed away, along with heart disease and cancer.
Watching someone I loved slowly lose his health, and eventually lose himself, changed me forever. When he died, I remember thinking: I don’t want this to be my future. I wanted to live a long life, but even more than that, I wanted to live well — to be there for my husband and my children, to stay active and independent and mentally sharp, to never forget the people I loved most.
So I started researching, and what I discovered gave me something I desperately needed: hope.
I Discovered I Had More Power Than I Realized
For so long, I’d thought diseases like heart disease, type 2 diabetes, certain cancers, and dementia were simply things that happened to us as we got older. But as I began studying nutrition and lifestyle medicine, I learned about the powerful role our everyday choices play in our long-term health, and food was a huge part of that. For the first time, I realized I wasn’t completely powerless over my future — the choices I made every day could matter.
My dad never had the chance to know what I was learning. He did what he was told, took the medications he was prescribed, and when it came to his Alzheimer’s, we were essentially told there was nothing we could do.
I often wonder what might have been different if our family had understood decades earlier what I know today. I’ll never have that answer.
But I knew that if this information could give someone else hope, and help them make choices that could change the trajectory of their health, I had to share it. That became the heart of Simply Plant Based Kitchen.
Knowing What to Eat Wasn’t Enough
There was just one problem: I’d tried plant-based eating before, and failed. I was a busy wife and mom working 60+ hours a week. I didn’t love cooking, and so many of the plant-based recipes I found called for ingredients I’d never heard of, took forever to make, or simply didn’t taste very good. I’d eat plant-based for a few months, feel great, lose weight, and eventually go back to my old habits.
That’s when I realized something that would later become central to everything I teach: the healthiest way of eating in the world won’t help you if you can’t actually stick with it.
If I wanted this to become my lifestyle, I had to make it simple — so I started creating easy, delicious plant-based meals using normal ingredients my family would actually eat, and I stopped chasing perfection. Everything changed.
Plants Changed My Health — And My Life
After recommitting to a whole food, plant-based lifestyle, I lost 20 pounds and more than 17 inches without counting calories or feeling hungry and deprived. But the changes I couldn’t see on the scale mattered even more: more energy, better sleep, improved digestion, and the brain fog that had worried me because of my dad’s history began to lift.
For the first time, eating healthy didn’t feel like another diet to endure — it felt like taking care of the future version of me. And because I’d learned how to make it practical, it finally felt sustainable.
That’s Why Simply Plant Based Kitchen Exists
Today, my mission is bigger than teaching people what to eat. I want you to know that you have choices, to understand the science behind how the foods you eat influence your health, and then I want to help you turn that knowledge into something you can actually live.
No complicated recipes, no obscure ingredients, no expectation of perfection, no starting over every Monday because you “messed up.” Just a practical, step-by-step way to eat more whole plant foods and build habits you can keep for the rest of your life — because this isn’t about following a perfect diet. It’s about giving yourself the best opportunity to live a long life, and live it well.
My Philosophy: Progress, Not Perfection
You don’t have to become 100% plant-based overnight to start changing the way you eat. Whether you’re simply trying to add more plants to your plate or you’re ready to go all-in, you’re welcome here. I know firsthand that trying to be perfect can make this lifestyle harder, not easier, which is why one of the most important things I teach is progress, not perfection. Every plant-based meal is a chance to nourish your body.
Every new habit matters. And every choice is another step in the direction of the life you want.
The Education Behind the Mission
My dad’s experience gave me my reason for doing this work; education gave me the tools to do it responsibly. I’ve earned my Plant-Based Nutrition Certificate through eCornell and the T. Colin Campbell Center for Nutrition Studies, as well as my Health Coaching Certification from the Institute for Integrative Nutrition.
I’ve continued studying the research on plant-based nutrition, chronic disease prevention, healthy aging, weight management, and longevity, and I’ve spent years helping people take that science out of textbooks and research studies and put it where it actually needs to go: onto their plates and into their everyday lives.
My Mission
Simply Plant Based Kitchen exists to help people understand that their health isn’t something they have to passively wait to lose. We can’t control everything about our health, and no way of eating can guarantee we’ll never develop disease. But we can influence our risk, make informed choices, and take action today that supports the future we want.
That’s the gift I wish my dad had been given, and it’s the gift I want to give to as many people as I possibly can.
I don’t just want you to live longer. I want you to live well, for as long as possible, with the people you love — and I’ll show you how simple and delicious eating more plants can be along the way.
