  • In a high-speed blender or food processor, combine the frozen banana, avocado, spinach, mint or peppermint extract, matcha, vanilla, non-dairy milk, and ice. Blend on high for 1 – 2 minutes, pausing to scrape down the sides of the canister with a spatula if needed, until smooth and creamy.
  • Add date or maple syrup if desired and pour into one or two glasses. Enjoy icy cold! 

Notes

Serving suggestion: Chocolate is an ideal pairing with anything minty, so a handful of dark chocolate chips or cacao nibs blended in at the last minute, left a bit chunky for texture, certainly wouldn’t hurt. 
Power up with a bit of protein powder, hemp seeds, or raw cashews to make this a more filling snack or light meal.
Notes: If you’re particularly caffeine-sensitive, feel free to omit the matcha and enjoy a more classic shamrock shake.
