1/2cupdates, pitted & chopped
Instructions
Process cashews in a food processor until a fine powder is formed. Add orange juice, dates, & coconut and process until dough forms.
Sprinkle extra coconut onto parchment paper. Roll dough into about 30 small balls and then roll in extra coconut to coat. Place balls in an airtight container and refrigerate until hard, about 1 hour.
Notes
You can freeze these balls so they last longer. When ready to eat, transfer to refrigerator to thaw.
