Acai is a superfood berry that has more antioxidants than blueberries & is high in Omega-3 fatty acids! This delicious & filling Vegan Acai Smoothie Bowl can be customized however you like with an endless combination of toppings.

Toppings
- 1/2 cup strawberries, raspberries, or blueberries any fruit! Fresh or frozen, thawed
- 1/4 cup granola oil free & low sugar
- 1 teaspoon unsweetened coconut flakes
- 1 teaspoon sliced almonds
Thaw frozen acai packet under warm water for 1-2 minutes. Cut open and add to high powered blender or food processor. Add frozen strawberries, banana, & plant milk to blender. Blend until smooth & creamy.
Pour acai smoothie into a bowl & top with desired toppings!
Toppings can be any fruit, granola, nuts, seeds, nut butter, dried fruit, or even vegan dark chocolate chips. Get creative!
To meal prep these ahead of time, use a divided meal prep container with 3 sections. Pour the Acai smoothie mixture in the largest section. Then put your fruit in one smaller section and the granola & dry toppings in the other smaller section. Freeze, then take out 1 the night before you intend to eat it and place in the refrigerator to thaw overnight. It will thaw just enough so it's the perfect consistency ready to eat for breakfast!
