Easy Vegan Ranch Dressing

Love ranch but not the bottled stuff? This Easy Vegan Ranch gives you all that creamy, garlicky, dill-packed flavor without a drop of oil. Instead, whole cashews blend into a rich, silky base, so the creaminess comes from real food rather than vegetable oil and additives.
Here's how it compares to Hidden Valley's Plant Powered Ranch. A 1/4 cup of the store-bought version has about 220 calories, 24 grams of fat and zero protein, and oil is its second ingredient. (And let's be honest no one uses only 2 tablespoons as a "serving size".)
The same 1/4 cup of this homemade ranch has 98 calories, less than a third of the fat, and 3 grams of protein from the cashews. That means less than half the calories for the same amount of dressing.
It takes 5 minutes in a blender and keeps in the fridge for up to a week. Drizzle it on salads, use it as a dip for veggies, or spoon it over a loaded baked potato.

Ingredients

Instructions

  • Add all ingredients to a high powered blender and blend until creamy.
(If you don't have a high powered blender, you will want to soak your cashews in warm water for at least 15 minutes to soften them)

Notes

For nut free, you can sub white beans, tofu or cooked potato.
Dressing will thicken in the refrigerator.  If you would like it to be thinner, add more milk (1/4 cup-1/2 cup more)
For a tangier flavor, add more lemon juice 1/2 tablespoon-1 tablespoon more.
Keep in a airtight container in the refrigerator for up to a week.
