In a medium skillet over medium heat, add the mushrooms and shallots. Cook, tossing occasionally, until the mushrooms release their liquid and become golden brown in spots, 5 - 7 minutes. Add the garlic and thyme, season with salt and pepper, and stir well.
Stir in the gnocchi, using your spatula to gently break them apart. Sauté for 3 – 4 minutes, then add the non-dairy milk, mustard, and nutritional yeast and bring to a simmer. Cook for another 4 – 5 minutes, until the gnocchi are tender.
Turn off the heat and add the spinach, stirring until mostly wilted. Transfer to plates and top with additional fresh thyme for garnish, if desired.
