Coconut Lemon-Lime Chia Seed Agua Fresca
If you do anything outside this summer, it’s imperative to stay hydrated! Plain water can do no wrong, but for those who need a bit more flavor to go for a glass, agua fresca is the thing for you. It simply means “fresh water” in Spanish and can be found in as many flavors are there are days in a year. The most standard set is very much like a lightly sweetened lemonade, bolstered with a touch of zesty lime. Chia seeds create a unique texture almost like miniature boba, making it a more substantial and satisfying drink that also hydrates more effectively, since they naturally swell to retain water. Sugary sports drinks have nothing on this refreshing blend of whole foods.

Combine the coconut water, lemon and lime juice, maple syrup, and chia seeds in a glass jar. Seal with the lid and shake well to combine. Place the jar in the fridge and chill for at least one hour for the chia seeds to plump up.
Shake once more before gulping down!

Pineapple Mint Agua Fresca: Blend the coconut water with 1 cup of fresh pineapple chunks until smooth. Strain if desired, then stir in a few fresh mint leaves along with the remaining ingredients. Chill and serve over ice for a bright, tropical refresher.
Cucumber-Melon Agua Fresca: Add 1/2 cup of peeled, sliced cucumber and 1/2 cup of cantaloupe or honeydew melon to the coconut water. Strain if you prefer a clearer drink and add the remaining ingredients. A pinch of sea salt can enhance the flavor for a refreshing, spa-like twist.
Watermelon Basil Fresca: Add 1 cup of diced seedless watermelon to the coconut water and blend until smooth. Strain if desired, then stir in a few torn basil leaves for a refreshing and slightly herbal twist. Omit the maple syrup but add all the other ingredients. Serve cold.
Notes: Chia seeds will sink to the bottom of the glass quickly. It’s best to shake or stir your drink right before drinking or enjoy with a straw.
