Preheat oven to 475° F. Line a baking sheet with a silicone baking mat or parchment paper.
Scrub the potatoes & then cut into wedges lengthwise. Spread out onto the baking sheet so that they don't overlap. Sprinkle with some Tajin or any seasoning you like.
Bake for 15 minutes, then flip the potatoes & bake for 15 minutes more.
Serve with some natural ketchup! Refrigerate any leftovers in an airtight container.
Notes
I prefer the Yukon Gold Potatoes or yellow potatoes, but you can use any potato you like - russet, sweet potato, red potatoes, & even purple potatoes. Cooking time is the same for all.
