Vegan Double Chocolate Chip Waffles

These plant based double chocolate chip waffles will be a family favorite for breakfast! Make sure to use vegan dark chocolate chips which do not contain oil or dairy.

Ingredients

  • sliced strawberries
  • blueberries
  • raspberries
  • date syrup

Instructions

  • Preheat a waffle griddle.
  • Milk together all dry ingredients in a large mixing bowl.
  • Add the milk, apple sauce, & vanilla and mix until well combined. Add more milk for thinner consistency. Mix in vegan chocolate chips if using.
  • If you have a non-stick waffle iron you won't have to use any oil, like a ceramic-coated one. But if you don't, lightly spray both sides of the waffle griddle with cooking spray. Using the waffle maker scoop (usually about a 1/4 cup) pour batter into the griddle. Close & cook according to the directions.
  • Makes about 4 large waffles, depending on the size of your waffle maker.
  • Top with fresh berries and serve immediately!

Notes

You can store the waffles in an air tight container for up to 7 days.  Reheat waffle in the microwave for 30 seconds to warm.
If you don't have a waffle maker, you can use this recipe to make pancakes!  Pour a 1/4 cup of the batter on to a pan or griddle on medium heat.  When the edges look dry, flip and cook for 2 more minutes.
The BEST WFPB syrup to use is date syrup!
