The Best Guacamole Recipe

This homemade guacamole recipe is so simple and easy to make!

Ingredients

  • 6-8 ripe avocados
  • 1 can Rotel (diced tomatoes & chilis), drained no salt added (I like mild)
  • 1 lemon juiced, or 2 limes
  • 1/4 cup chopped fresh cilantro (or 1 tablespoon dried cilantro)
  • 1-2 teaspoons garlic powder
  • dash of salt & pepper to taste

Instructions

  • Slice open avocados, remove seeds (set aside for later) and then scoop out avocado into a medium bowl. Mash avocado with back of a fork until smooth, but slightly chunky if desired.
  • Add the rest of ingredients & mix until well combined. Taste and add more garlic, salt, pepper, or cilantro if necessary.
    Add seeds back to guacamole and serve immediately.

Notes

To store guacamole for longer:
I put the guacamole in a storage container like Rubbermaid Premier (that's what I use and love). I then take the Press N Seal and press it against the guacamole and up the sides of the container to completely seal out the air. I then put the airtight lid OVER the Press N Seal layer. This technique has helped my guacamole last for DAYS!
